-從冰箱取出雞,大火滾下煮3-5分鐘,或中火煮6-7 分鐘,其中要輕輕打圈攪動蛋,令蛋黃固定在中央,時間一到立刻離火,放進冰冷水里降溫,將蛋売敲裂放回水中,讓水中,讓水滲入易剝,將凍過的蛋放入裝了鹵水汁的密封袋(凍)中,放雪櫃冷藏3小時以上。
