材料:
雞扒2塊,蟲草花25g, 杞子2匙,鹽一匙,胡椒粉一匙, 雞湯250ml, 花雕洒150ml(也可用玫瑰露酒,糟鹵), 水250ml, (可放其他材料,鮮淮山)
做法:
1)將雞切平放,用鹽醃一下,下胡椒粉,放蟲草花,杞子淮山,卷雞塊,再用錫紙卷封,用100度滾水隔水蒸15-20分鐘。
2)另雞湯,水煮滾,最後加入酒,杞子,放冷,再放入雞卷,放入雪柜2小時,或過夜
